E' nata il 30 dicembre 1980 a Boston, nel Massachussets e nelle sue vene scorre del sangue albanese e danese. Sua madre è professoressa all' università si Suffolk, ha tre fratelli più grandi, di cui uno è attore, Nate Dushku. Eliza fu scoperta dopo 5 mesi di ricerche per tutti gli States per una ragazza che interpretasse il ruolo di Alice, l'antagonista di Juliette Andrews nel film "That night". Da quel momento in poi ha recitato in numerosi film affiancando attori del calibro di Robert DeNiro, Ellen Barkin, Leonardo DiCaprio, Paul Reiser, e Jim Belushi. Prima di tutto ciò però si era dedicata al teatro e allo studio della danza ed è capace di suonare il pianoforte e la batteria. Nel tempo libero ha imparato il linguaggio dei segni per recitare in spettacoli dedicati ai non udenti.
